fall favorites

  • wonderful fall temps made for great park days & yes, even the splash pad in early October.  and what a difference a few weeks makes.  brrrr.

  • a new delicious recipe just in time for the weather to cool down.  a hit with everyone here.  a must try. (thanks Brooke)
White Bean Chicken Chili (Food Nanny)

1 lb boneless, skinless chicken breasts
1 tablespoon vegetable oil
1 small white onion, diced
6-8 small garlic cloves, minced
1 (7 oz) can diced green chiles, drained
2 (15 oz) cans white beans, undrained
3 C chicken broth
1 teaspoon chicken bouillon granules
2 teaspoons ground cumin
2 teaspoons dried oregano
1/2 - 1 teaspoon cayenne pepper
1 C sour cream, plus additional for topping
3 C shredded Monterey Jack cheese
chopped fresh cilantro
chopped tomatoes

1.  Cook the chicken by the desired method,  Cool & tear into pieces.  Set aside.
2.  Heat the oil in a large pot over medium heat.  Add the onion and garlic, and cook and stir until the onion is translucent, 2-3 minutes.  Add the chicken, chiles, beans, broth, chicken bouillon, cumin oregano & cayenne.  Simmer 30-45 minutes.  Chile can be made ahead to this point and refrigerated or frozen for serving later.
3.  Add the 1 C sour cream & cheese & continue cooking until the cheese is melted.  Keep warm until serving.
4.  Serve in bowls & pass cilantro, tomatoes & additional sour cream to garnish.  I also served with tortilla chips.
  • follow up  above chili (or anything for that matter) with these cookies.  (don't ask how many batches of these I have made in the last month.  I am a sucker for chewy, butter crisco-y cookies.)

  • 3rd annual Halloween donuts @ the Edwards' house.  excited Shane has the night off.  something we all look forward to each year.  stop by for a hot donut Saturday night if you are out and about with your trick or treaters.  bring on the week of sugar!

hey there...
saw your comment about the little dessert cups.
I've seen them a few places.
Partyland has them- a bit pricy if you need a ton, some have stems-others are "shooters"

these are a bit squarish and we get them from a place called pipeables-sweet street desserts and we order them by the case full. I grabbed a stack of them for you and will give them to Erika and she can get them to you.

also-I saw some smaller versions at my Kohlers the other day down the dollar aisle.
also, at Fresh Values down their party aisle. they are smaller & rounded but really cute. & cheap!

I'm so bummed we missed donut night! Next year we'll be there for sure. Maybe we should just get together soon and I can try making that white chili and some donuts. And those cookies. and then we'll go to the red barn for ice cream. And more donuts. Yes... this will be a great night...
