for kids that are so willing to take pictures when i am not around. found these cleaning off my camera roll on my phone. love them.

after a week of the nebulizer for kade and a run of the stomach bug for the ENTIRE family, thankful for good health!

for a hard-working husband/dad that after 2 long months of an awful schedule, he is finally getting some extra time at home. so thankful for his job, especially when there are so many who are looking for work.

to the late steve jobs. we can't believe what a huge difference facetime has made for our little family. being able to see each other everyday sure makes 4 days not so long. technology is amazing.

sweet baby matthew returned home. born at 25 weeks, he was such a fighter. though we didn't know him, we love him. the kid's prayers have been so tender and sweet. they still pray that he will live again.

have felt like I have been in a cooking slump lately. made this last week and was too good not to share.
sent to me by my favorite recipe-swapping friend, Steph.
(and who knew how easy and I am sure healthy...wink wink...rotisserie chicken makes things?)

Chicken-Chili Crescent Bake

rotisserie chicken, shredded

1 can Bush's Grill'n Beans {Fiesta Black Beans}

1 can Rotel {mild}

2 Tbs. taco seasoning

1-2 cups shredded colby jack cheese

1 can crescent roll dough

mix together chicken, beans, Rotel & taco seasoning and heat 5 min. until heated through. move to 9x13 cover with cheese. top with crescent dough, making a crust over the mixture. bake @ 375 for 18-25 minutes until golden brown. remove; cool 10 min. garnish with sour cream. it's a bit spicy so the sour cream helps to tame it a little.

newborn stage won't last forever. enjoy that sweet little girl & her smelly newborn head.
you won't always feel this way. hormones are awesome.
days & nights will soon be separate.
don't have a baby in the winter months ever again. (rsv & winter blahs) too much working against you.
retail therapy will not make you feel better...at least when it comes to trying things on for yourself.
be nice to shane. everything is not his fault. dang it.
don't worry about the dirty house. as long as the kids are fed, life is good.
plan a trip for next winter...should be mandatory to get-away in feb or mar.
read and re-read this everyday! :)

White Bean Chicken Chili (Food Nanny)

1 lb boneless, skinless chicken breasts

1 tablespoon vegetable oil

1 small white onion, diced

6-8 small garlic cloves, minced

1 (7 oz) can diced green chiles, drained

2 (15 oz) cans white beans, undrained

3 C chicken broth

1 teaspoon chicken bouillon granules

2 teaspoons ground cumin

2 teaspoons dried oregano

1/2 - 1 teaspoon cayenne pepper

1 C sour cream, plus additional for topping

3 C shredded Monterey Jack cheese

chopped fresh cilantro

chopped tomatoes

1. Cook the chicken by the desired method, Cool & tear into pieces. Set aside.

2. Heat the oil in a large pot over medium heat. Add the onion and garlic, and cook and stir until the onion is translucent, 2-3 minutes. Add the chicken, chiles, beans, broth, chicken bouillon, cumin oregano & cayenne. Simmer 30-45 minutes. Chile can be made ahead to this point and refrigerated or frozen for serving later.

3. Add the 1 C sour cream & cheese & continue cooking until the cheese is melted. Keep warm until serving.

4. Serve in bowls & pass cilantro, tomatoes & additional sour cream to garnish. I also served with tortilla chips.

follow up above chili (or anything for that matter) with these cookies. (don't ask how many batches of these I have made in the last month. I am a sucker for chewy, butter crisco-y cookies.)

getaway for belated 10 yr anniversary before #3 comes along and grandma & grandpa aren't as eager to take on 3 kids. :) thanks again for the week away...the kids (big & little) had a great time.

2. eating out daily with zero kids & actually having adult conversations and the ability to finish a full meal without numerous kiddo bathroom breaks. and don't forget that our first night there we ate @ Costco. but hey...no kids. :)

3. see the Grand Canyon of the Islands, Tunnel of Trees, Na Poli Coast, Forbidden Island (from afar), lighthouses, plantations, Tunnels Beach...among other various snorkeling spots along the island.

4. track down the best local shaved ice & Puka Dog. extra added bonus was to find

Hi-Chews.

5. stay at the beautifully remodeled Marriott Resort & enjoy these views everyday.

6. get a kick out of all the wild chickens (seriously they were like pigeons there...all over) & know that I am pregnant & emotionally pathetic when I snap the last pic and actually well up with tears because it reminds me of my two little ones back at home.

7. have the smoothest 3 leg non-rev travel experience and look forward to doing this again soon. thank you travel benefits. (sorry Shane, December is a little soon to go back. let's hold off until the baby comes at least) :) also, glad to have recruited a few more neck pillowers. you know you secretly want one Shane.

8. great tour guides & all around awesome company for the week. always remember to tie down the straw mats to top of rental van...otherwise you'll need the Vanillaroma x 3.

hard, stinky lesson learned.

9. although Shane & I didn't find a plate lunch this time around, we enjoyed the ambiance of Duke's @ night & of course Hula Pie.

10. came home renewed, full of vitamin D, happy to see my favorite little people and hunker down for the cold winter months ahead.

glad to be home but missing you Kaua'i.

cheered Shane on bright & early for the Onion Days 5k.

he may have me convinced to do it with him next year. maybe.

had to bust out the stretchy pants this week. such a dreaded day.
upside is...I felt baby movement this week. nothing like it.

probably the sole reason stretchy pants were essential. not sure who to be more upset at...Target for putting these out so blasted early or Jamie for texting me that she had 2 bags in her cart, therefore forcing an unplanned trip to Target by me. these are deadly.

(and yes, you can only find them at Target. trust me I called around.)

he's done it! he is growing up on us.

seems like yesterday he was just a toddler...

now, no matter what I do...I can't convince him to stay little.
we sure love this boy and his fun-loving personality.
by his request, we celebrated his big day at the cabin.

something about leavin' the windows open and the crisp mountain air while you sleep.

I love the following scenes while relaxing for the weekend...

way behind. 1st trimester was a bugger. back in action now.

in no particular order.

it's been a great summer.

sad to see it coming to an end.

Camping at the State Park in Midway with the Wilson crew.
Learned that I will never be a backpacker...no sleeping in tents for me.
Slight anxiety attack. :)
The tin foil dinners, S'mores & roasted Starbursts made up for it though.

Happy 24th! Spanish Fork parade with friends.

Dear Kendal,

Can't believe you are 3! Although you are 99% in your height (which makes your 5 foot nothin' mom proud), please stop growing so fast. You have made this family so happy and we love you more than you will ever know. Your independent & defiant personality is going to work to your advantage some day (at least that is what I tell myself). Your sweet dimples get you out of anything and for this, you are pretty lucky. We can always count on you to keep us laughing. Thanks for being you and for making your dad & I extremely happy.
